5 Dessert Recipes with Baileys

If you’re celebrating the holiday today, you’re in luck because I have some treats that you’ll be sure to love. I was thrilled when @Baileysus hit me up to collaborate on 5 easy recipes. Each recipe is fun, indulgent, exciting yet super simple to make — because we all deserve to treat ourselves every once in a while.

Baileys Affogato with Stracciatella

Serves: 4 people

Active Time: 10 minutes

Total Time: 20 minutes

Level: Easy

Ingredients:

  • 1 cup bittersweet chocolate chips

  • 1 pint vanilla bean ice cream

  • 4 shots Baileys

Steps:

Line a baking sheet with parchment paper and make room in your freezer for the baking sheet.

Add the chocolate to a heatproof bowl and microwave in 30 second increments, stirring in between each microwave sesh, until the chocolate is melted. Spread onto the parchment paper in a thin layer and place into the freezer for 5-10 minutes or until set. Remove from the parchment and break into shards.

To serve, place a scoop of ice cream into a glass, top with chocolate, and drizzle with 1 shot of Baileys. Serve immediately and enjoy!

Baileys Banana Pudding

Serves: 8-10 people

Active Time: 20 Minutes

Total Time: 4 hours and 20 minutes

Level: Easy

Ingredients:

  • 1 packet vanilla pudding mix

  • 1 can sweetened condensed milk

  • 3 cups heavy whipping cream

  • 3 tablespoons Baileys 

  • 1 teaspoon vanilla extract (optional)

  • 4 bananas, sliced

  • 1 box vanilla wafer cookies

  • 4-5 milk chocolate chips, for garnish



Steps:

In a medium bowl, whisk together pudding mix, condensed milk, and 1 1/2 cups cold water. Place into the refrigerator to set for 5-10 minutes.

In the bowl of a stand mixer fitted with the whisk attachment, combine heavy whipping cream, Baileys, and vanilla extract. Whip on medium-high speed still peaks form, about 4-5 minutes. Add the pudding mix to the stand mixer bowl and whip until just combined.

Using 8-10 shallow water glasses, layer a 1/4 inch of whipped cream mixture, a layer of sliced bananas, another 1/4 inch of whipped cream mixture, and layer of wafer cookies. Repeat until the glass is full, finishing with a whipped cream mixture layer. Place into the refrigerator to set, at least 3 hours and up to overnight. The longer the pudding chills, the softer the wafer cookies will get.

Before serving, using a microplane, grate milk chocolate over the tops of the pudding cups. Enjoy!

Thumbprint Butter Cookies with Baileys Caramel

Makes: 20-24 cookies

Active Time: 30 minutes

Total Time: 2 hours

Level: Medium

Ingredients:

FOR THE COOKIES:

2 sticks room temperature butter, unsalted

3/4 cups sugar

2 eggs, 1 whole, 1 yolk, at room temperature

2 teaspoons vanilla extract

2 cups AP flour

1 teaspoon kosher salt

FOR THE CARAMEL:

1/2 cup granulated sugar

1 tablespoon water

1/4 cup butter

3 tablespoons heavy cream

1 tablespoon Baileys

OPTIONAL GARNISH:

1 cup melted chocolate, for drizzling 

Flaky sea salt



Steps:

MAKE THE COOKIE DOUGH: Combine butter, sugar, eggs, and vanilla extract in a stand mixer and beat together on a medium speed until light and fluffy, about 3-5 mins.

Add the flour and salt and mix until just combined. Cover and refrigerate for 45 minutes to an hour or until firm. 

Preheat the oven to 375 degrees fahrenheit and line a baking sheet with parchment paper

Roll out 1 inch balls of dough and space them 2 inches apart on a baking sheet. Using your thumb, press into the center of each cookie to create an indentation. Bake for 9-11 minutes, or until the edges are golden. Remove from the oven and keep on the tray for 5 minutes to cool. 

MAKE THE CARAMEL: In a medium saucepan, combine the sugar and water and whisk until the sugar is hydrated. Remove the whisk, tapping any sugar back into the pot, add in the butter and cook over medium heat undisturbed, until the butter is melted, the sugar is bubbling and it starts to turn a copper color, about 3 to 5 minutes. Remove from the heat and add the heavy cream and Baileys. Carefully whisk to combine, the mixture is hot. Set aside to cool.

Pour the cooled caramel mixture into the indentations of the cookies. 

Drizzle with melted chocolate and sprinkle with flaky sea salt. Enjoy!

Baileys Brigadeiros

Serves: 4 people

Active Time: 15 - 20 minutes

Total Time: 50 minutes

Level: Easy

Ingredients:

  • 1, 14 ounce can of sweetened condensed milk

  • 1 tablespoon unsalted butter

  • 1 tablespoon Baileys 

  • 3 tablespoons unsweetened cocoa powder

  • ½ teaspoon salt

  • Chocolate sprinkles (for rolling)

  • Pistachios, crushed (for rolling)

Steps:

Combine in a medium saucepan over a low heat combine all ingredients, stirring continuously, until the mixture thickens and a streak made through the center holds for about 2-3 seconds, about 12-15 minutes. Transfer to a greased plate and pop in the freezer until set, about 30 minutes. 

Roll into 1 inch balls and roll into chocolate sprinkles or pistachios. Enjoy!

Baileys Chocolate-Covered Pretzels

Serves: 4-6 people

Active Time: 20 minutes

Total Time: 1 hour

Level: Easy

Ingredients:

  • 2 teaspoons Baileys

  • 1/4 cup flaky salt, for garnish

  • 1, 7 ounce bag of pretzels

  • 1, 11.5 ounce bag of bittersweet chocolate chips

Steps:

Line a baking sheet with parchment paper and make room in your freezer for the baking sheet.

Combine Baileys and salt in a small bowl and mix together to combine, set aside.

Add the chocolate to a heatproof bowl and microwave in 30 second increments, stirring in between each microwave sesh, until the chocolate is melted.

Dip the pretzels into the chocolate, covering half of their surface area, tapping off any excess back into the bowl and place on the parchment lined baking sheet. Sprinkle with Baileys-infused salt and place into the freezer for 5-10 minutes, or until set.
