Easy Avocado Toast

Ingredients:
Extra virgin olive oil
1 slice sourdough
1 clove garlic
Kosher salt and freshly ground black pepper
1 egg
1/2 avocado
1 lemon wedge
2 teaspoons minced fresh chives
1 teaspoon lemon zest
Aleppo pepper or chili flake (optional)
Steps:
Add 2-3 tablespoons of olive oil to a medium pan over a medium heat. Once shimmering, add the bread. Toast for 1-2 minutes per side or until golden-brown. Rub both sides of the bread with garlic and season with salt.
In the same pan, add more oil and fry 1 egg for 2-3 minutes per side until the exterior is cooked and the yolk is still runny. TIP: if you want it to look extra fancy, put the egg in a metal ring mold.
Using a fork, mash the avocado onto the bread. Season with salt and pepper, squeeze lemon juice over the avocado and sprinkle with chives, lemon zest, and Aleppo pepper.
Top with egg, sprinkle with remaining chives, lemon zest, Aleppo pepper, salt and pepper. Enjoy!
Cook’s Notes: To keep half of an avocado fresh, rub citrus on the exterior, wrap the avocado tightly in plastic wrap, and refrigerate.
