Prosecco with Spiced Cranberry Shrub and Sugared Cranberries
Say hello to your new favorite holiday drink: Prosecco with Spiced-Cranberry Shrub! Holidays are all about getting together with friends and family and celebrating the joys of the season, and my favorite thing to do over the holidays is raise a glass with a fabulous drink. ALDI has a very impressive selection of award-winning wines, ciders, and beers, and they carry my favorite: Prosecco. I love creating a simple spiced-cranberry shrub — a flavored-syrup made of fruit, vinegar, aromatics, and sugar. It is really the perfect addition to any glass of Prosecco and my favorite thing to serve at a holiday party. Plus, you can make it in advance and store it in your fridge for up to a month. I got all the ingredients and the glasses, ice bucket and bar set at ALDI.
Spiced-Cranberry Shrub
Makes: 1 cup
Prep Time: 30 minutes
Chill Time: 10 hours, or overnight
Ingredients
1, 12-ounce bag fresh or frozen cranberries (2 cups)
1 1/2 cups apple cider vinegar
1 tablespoon ground cinnamon
2/3 cups granulated sugar
1 tablespoon grated ginger
Steps:
In a large saucepan over medium-high heat, combine all ingredients and bring to a boil, stirring occasionally, until the cranberries have broken down, about 12-15 minutes.
Remove from heat and let the mixture cool for 15 minutes. Transfer to a container and store in the refrigerator for 10 hours and up to overnight.
Strain the solids from the cranberry mixture through a cheesecloth set over a fine mesh strainer. Store in an airtight container for 3 weeks and up to a month.
To serve, combine 1 bottle of Belletti Prosecco with 6 ounces of Spiced Cranberry Shrub and stir together. Pour into individual glasses and enjoy!
Sugared Cranberries
Makes: about 2 cups
Active Time: 5 minutes
Total Time: 55 minutes
Ingredients:
1, 12 ounce bag fresh cranberries (about 2 cups)
1 1/2 cups granulated sugar
Steps:
Prepare a baking sheet with parchment paper and pour 1 cup sugar onto the parchment shaking to evenly distribute along the baking sheet.
Combine 1/2 cup sugar with 1/2 cup water in a shallow saucepan over medium heat and stir until dissolved, about 2 minutes. Remove from heat and add the cranberries. Toss to fully coat the cranberries.
Using a slotted spoon, transfer cranberries onto the sugar on the baking sheet, delicately shake the tray to coat the cranberries in sugar, tossing the cranberries to fully coat. Dry the cranberries for 45 minutes. Use it to garnish any cocktail of your choice.
