Za’atar Roasted Chickpeas

Makes: 1 1/2 cups

Level of Difficulty: Easy

Ingredients:

  • 2, 15 ounce cans chickpeas, drained and rinsed

  • 1/4 cup extra-virgin olive oil

  • Kosher salt and freshly ground black pepper

  • 2 teaspoons za’atar

  • 1 lemon wedge, optional

Method:

Preheat the oven to 400 degrees fahrenheit. 

Add chickpeas to a rimmed baking sheet. Toss with olive oil and season with salt and pepper. Bake for 15 minutes, shaking the chickpeas every 5 minutes. Remove from oven, season with za’atar, tossing to coat, and place back into the oven for an additional 5 minutes until golden and crispy. 

Squeeze with optional lemon wedge, serve immediately and enjoy! 


Cook’s notes: Chickpeas are best enjoyed warm as a snack or on top of a salad.
