It’s BLT season, my favorite season! One of the first things I ever made for Xander was a BLT, and the rest is history! Ripe & juicy tomatoes that are screaming for some mayo, bacon, bread, and shredded lettuce to join them on holiday to Flavortown (s/o Guy Fieri). This recipe takes our fave and turns it into the perfect appetizer for hosting a crowd. Make sure you serve them with cocktail napkins or small plates because these bad boys are unapologetically messy — and we love them for it.
Ingredients:
1 baguette, cut on a bias into 1-inch thick slices
3/4 cup mayonnaise
8 strips thick-cut bacon
1 pint cherry tomatoes, halved
kosher salt and freshly ground black pepper
1 clove garlic
1/2 cup shredded iceberg lettuce
Method:
Preheat the oven to 400 degrees fahrenheit. Spread both sides of the bread with mayonnaise and place on a baking sheet. Toast for 8-10 minutes, or until golden.
Place bacon on a separate sheet tray and cook for 8-12 minutes until crispy. Transfer the bacon strips to a paper towel-lined plate to drain off the excess grease. Break the bacon strips in half.
Salt the cut sides of the tomatoes.
Rub garlic over the toasted bread, spread with remaining mayo. Top with bacon, shredded lettuce, and tomatoes. Season with freshly ground black pepper and enjoy!
