Garlic Bread Egg In a Hole with Sun-Dried Tomatoes

Ingredients:

  • 1 slice bread

  • 1 tablespoon olive oil

  • 1 large egg

  • 1 clove garlic

  • Kosher salt and freshly ground black pepper

  • 3 sun dried tomatoes, thinly sliced

  • 1 tablespoon freshly grated parm

  • Fresh basil, for garnish

  • Crushed chili flake, for garnish

Method:

Cut a hole in the center of the bread using a cookie cutter or cup.

Add olive oil to a skillet over medium heat. Add both pieces of bread and fry. Crack an egg into the hole of the bread and cook for 2 minutes, flip, and cook for an additional 2 minutes or until golden.

Remove from heat and rub the top of the bread with a clove of garlic. Season with salt and pepper. Top with sliced sun dried tomatoes, parm, basil, and chili flake. Enjoy!
