Mixed Berry Clafoutis
Clafoutis is a dessert that is shockingly easy to make. You mix everything together and you bake it for 30 minutes, I look at it like a dish that has the texture of a crepe with the shape of a dutch baby pancake. You can eat it for breakfast or eat it for dessert. All around, this is a go-to for when I want something special with very little effort.
Mixed Berry Clafoutis
Serves: 4-6 people
Active Time: 15 minutes
Total Time: 45 minutes
Ingredients:
1/2 cup all-purpose flour
1/3 cup granulated sugar
1/2 teaspoon kosher salt
1/3 cup milk
2 tablespoons butter, melted
3 large eggs
1 teaspoon vanilla extract (optional)
Zest of 1 lemon (optional)
2 cups fruit (I use blueberries and raspberries)
powdered sugar, for garnish
Steps:
Preheat oven to 350 degrees Fahrenheit. Grease a 9-10 inch circular baking dish, pie pan, or cast iron skillet.
In a large bowl, combine flour, granulated sugar, kosher salt and whisk to combine.
In a small bowl, combine milk, melted butter, eggs, lemon zest, and vanilla extract and whisk until well incorporated.
Pour the liquid mixture into the bowl of dry ingredients and whisk until just combined.
Pour into greased baking dish, decorate with berries, taking care to make sure the berries are evenly distributed throughout, and bake in the middle rack of the oven until golden, slightly puffed, and set 30-35 minutes. Remove from the oven, cool for about 5-10 minutes. Dust with powdered sugar and serve.
Clafoutis can be stored in an airtight container for up to 3 days.
