Ice Cream Hack #3: Dark Chocolate Coconut
I love ice cream. In this third installment of my Ice Cream Hack Series I bring you an all too underrated combo: Dark chocolate and coconut ice cream.

Dark Chocolate Magic Shell
INGREDIENTS:
Ice Cream:
1 cup unsweetened coconut flakes, toasted
1 pint vanilla ice cream
1/2 cup dark chocolate, melted
Dark chocolate magic shell:
1/2 cup unsweetened coconut flakes, toasted
1 cup dark chocolate chips
1.5 TBSPs coconut oil
STEPS:
For the ice cream: Remove vanilla ice cream from the freezer and let it soften a bit, about 5-10 minutes.
While ice cream is softening, using an offset spatula or a spoon, spread your melted chocolate in a very thin layer on a parchment lined baking sheet. Chill in the refrigerator until hardened.
Once hardened, break chocolate up into shards.
In a medium bowl, combine 1 cup toasted coconut flakes, ice cream, chocolate shards.
Return to the freezer and freeze for 2-3 hours or up to overnight
For the magic shell: In a microwave safe bowl, 1 cup chocolate chips and coconut oil. Microwave in 30 second intervals, stirring in between, until melted. Be careful with your chocolate, as it can easily burn.
Assemble: Scoop ice cream onto a cone or bowl of your choice, drizzle chocolate shell over the top, garnish with toasted coconut.
