7 Seed Crackers

If I could eat crusty sourdough bread with butter EVERY. DAY… I would. But apparently that's not sustainable for a balanced lifestyle. Fortunately, these incredibly delicious and easy to make crackers are. I’m not here trying to reinvent bread or convince you that it can be replaced by an invention that has magical healing powers, but hopefully after trying these crackers you’ll be just as excited to eat them next time you want a crunchy snack.

Seed crackers are your vehicle for dips and toppings that satisfy all cravings (minus the carbs) without compromising flavor.  Healthy fats, satisfying crunch, and did I mention all you do is mix the ingredients in a bowl and bake them?! Yes, they really are that good.

Ingredients:

  • 1/2  cup shelled raw pistachios, 

  • 3/4  cup sunflower seeds

  • 3/4  cup pumpkin seeds

  • 1/2  sesame seeds

  • 1/2 cup flax seeds 

  • 1/2 cup chia seeds

  • 1 teaspoon granulated garlic

  • 2 teaspoons kosher salt

Steps:

  1. Preheat oven to 375 degrees fahrenheit 

  2. Place 1/2  cup pistachios in a food processor and pulse until coarsely chopped.

  3. Combine chopped pistachios, 3/4 cup sunflower seeds, 1/2  cup pumpkin seeds, 1/2  cup flax seeds, 1/2  cup chia seeds in a medium bowl. Season with 1 teaspoon granulated garlic and 2 teaspoons kosher salt. Add 1/2  cup chia seeds and 1/2  cup sesame seeds to the bowl and mix until combined. 

  4. Add 1 2/3 cup water to the combined mixture. Let soak for 12-14 minutes until the water has been absorbed and the chia seeds look hydrated and gelatinous. Stir again.

  5. Pour the mixture onto a parchment lined baking sheet, and spread using a spatula into a single layer (about 1/8  inch thick). 

  6. Bake between 1 hour and 25 minutes - 1 and 30 minutes, rotating half way through, Until crackers have hardened.
