Peanut Butter & Banana Toast with Cinnamon-Almond Crumble

Peanut butter and banana is one of the best combos. I usually just eat it on its own but I figured it would be absolutely perfect in toast form. To kick it up a notch, I added a little cinnamon-almond crumble to the top of the toast along with some flaky salt and this bad boy is a new go-to easy lunch option. 

Ingredients:

  • 4 slices sourdough, cut into 1/2-inch thick slices 

  • ½ cup creamy peanut butter, divided

  • 2 bananas, halved and cut into 1/2 inch thick slices lengthwise

  • 1 tablespoon unsalted butter

  • 1/3 cup sliced almonds

  • 1 tablespoon honey

  • ¼ teaspoon cinnamon

  • Kosher salt 

  • Flaky salt (such as Maldon or Jacobson), for garnish 

Method:

  1. Preheat the oven to broil. Toast bread in a preheated oven on a rimmed baking sheet for 1-2 minutes per side. Alternatively, toast in a toaster. 

  2. Divide and spread peanut butter among toasted bread slices. Top with banana slices.

  3. Melt butter  in a medium skillet over medium heat. Add almonds, honey, and cinnamon and cook, stirring occasionally, until golden, about 3-5 minutes. Remove from heat and sprinkle with salt. 

  4. Top toasts with almond crumble, season with flaky sea salt and enjoy!
