Spooky Shrimp Cocktail

Ingredients:

  • 3 tablespoons kosher salt

  • 3 tablespoons granulated sugar

  • 1 lb frozen tail-on jumbo shrimp, thawed, shelled, and deveined

  • 1 cup cocktail sauce, homemade or store-bought, for serving

  • 3 liquid syringes (click here to buy)

  • 1 lemon, quartered, seeded, quarters halved, for serving

Steps:

  1. In a medium pot, bring 4 cups of water to a boil. Prepare a large ice bath.

  2. Once boiling, add kosher salt and granulated sugar and stir to dissolve. Add the shrimp, close with the lid, and turn off the heat. Let the shrimp poach for 2-4 minutes, or until pink and cooked through. Drain and immediately transfer to an ice bath to shock and stop the cooking process. The shrimp should be fully submerged. Let the shrimp sit in the ice bath for 5 minutes. Remove from the ice and pat dry.

  3. Insert the syringe into the cocktail sauce and pull the syringe to fill with sauce. Wipe the bottom of the syringes with a damp paper towel or cloth to clean.

  4. To serve, add ice to a large shallow bowl. Add shrimp to the top of the ice, garnish with cocktail sauce syringes and lemon wedges. Enjoy!

Cook's Note: Shrimp can be cooked up to 1 day in advance, stored in the refrigerator dry in an airtight container until ready to use.
